A classic pairing but plant-based with the same great taste and mozzarella that still melts and stretches.
INGREDIENTS
- NOT Mozzarella (shredded)
- Italian bread or sourdough
- Fresh basil pesto
- Sun-dried tomatoes
- Olive oil
- Chips / Salad for the sides (optional)
Instructions

Spread the pesto on one side of the bread then top with some NOT Mozzarella
- Top with some sun-dried tomatoes

Close the sandwich and press firmly on the top
- Heat about half a teaspoon of olive oil in a medium skillet
- Place sandwich in the skillet and on each side for 3 minutes
